In this spells God for He created the universe and everything in it.
At the end of the spiral is the Dove in flight, that is the spirit of God who is in all of His children.
The Universal Christian Symbol of Gratitude was created as a visual reminder that it is the Lord we need to be grateful to. It's like when we see a cross (necklace, at church, on the wall or even on a piece of paper) we automatically think of Jesus. Or when we see the fish on the back of a car or drawn in the sand we automatically think: here is a Christian.
